Healthy Sheet-Pan Chicken & Veggies

There are weeknights when the last thing you want to do is stand over a stove managing three pans. This sheet-pan chicken and veggie dinner is my answer to that. Everything goes on one pan, roasts together at high heat, and comes out with those gorgeous caramelized edges that make simple food taste incredible.

It's high in protein, loaded with fiber-rich vegetables, and ready in about 35 minutes from start to finish. It's also endlessly customizable — swap the veggies based on what's in your fridge, and the whole meal changes.

Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Vegetables

  • 1 large zucchini, sliced into half-moons
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • Salt, pepper, and a pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F. Line a large sheet pan (or two smaller ones — don't crowd the pan or the veggies will steam instead of roast) with parchment paper.
  2. Season the chicken. In a bowl, toss chicken thighs with olive oil, garlic powder, smoked paprika, onion powder, oregano, salt, and pepper until evenly coated.
  3. Prep the vegetables. In a separate bowl, toss all vegetables with olive oil, salt, pepper, and red pepper flakes.
  4. Arrange on the pan. Place chicken thighs on one side of the pan. Spread vegetables in a single layer on the other side. Make sure nothing is overlapping — space equals crispiness.
  5. Roast for 22–26 minutes, until the chicken reaches an internal temperature of 165°F and the vegetables are tender with golden edges. If you want extra caramelization, switch to the broiler for the last 2–3 minutes.
  6. Rest and serve. Let the chicken rest 5 minutes before slicing. Serve as-is, over brown rice, or tucked into a whole-grain wrap.

Janna's Tip: Chicken thighs stay juicier than breasts at high heat and are more forgiving if they go a few minutes over. If you prefer breasts, pull them at 165°F immediately and don't go past that — they dry out fast.

  • Lemon-Herb: Add lemon slices directly on the chicken and use fresh thyme and rosemary
  • Kid-friendly: Skip the red pepper flakes, use mild veggies like carrots and broccoli, add a honey glaze
